8-10 boneless, skinless chicken thighs

2 Tb olive oil

2 tsp adobo seasoning

2 tsp cumin

1 cup chicken broth
-
1 cup Sofrito (include the tomatoes in this version)

Season chicken with adobo and cumin.

Cook chicken in oil until golden brown.

Reduce heat to low. Add chicken broth & sofrito.

Cover & simmer until chicken is falling apart, ~1 hr.

Serve with rice & beans.
